CPU / GPU Issue. Could use some help/advise/direction

I am having an issue with illustrator when using View Using GPU setting. I have attached pictures of the problem. You can see how the text is cut off and not displaying properly. It saves fine but when I am working with the file it is showing cut off. I also have quite a few other separate files with the exact same layout for different products that are all experiencing the same behavior. I have been using the GPU setting as things tend to run smoother while scooting around my project but now this which just started happening a few days ago is forcing me to switch to CPU view which is much slower and choppier when moving around. 

 

To date, I have already updated windows fully and Illustrator as well as my video card driver (2080ti) to the latest drivers. I have tried both the Gaming driver and Studio driver but nothing has resolved this issue. 

 

Here is my current rig setup.

Windows 10 Pro

AMD 3900x (not overclocked)

64bg ram

Nvidia 2080ti

Samsung 970 PRO M.2 2280 1TB NVMe

Latest version of Illustrator

 

Any help from anyone would be greatly appreciated.

In Which color mode does that happen? 
RGB or CMYK ?

Are there multiple monitors? Does it happen on all screens?

Is there a Wacon attached? Does it happen when you detach it?

 

Most likely you can't solve it, but have to work for updates. You can try and report it on http://illustrator.uservoice.com

Yes, I have 2 monitors but it happens on both of them. No Wacom in the mix. Everything used to work fine until the other day. No changes have been made.
