Cut objects and white to make a black logo

Okay, so I have a logo that was made by my predecessor. He made the logo using a bunch of shapes and objects in both a black and white and color version. I want to cut all the white out of the b&w logo so all I have is black and nothing in between (transparency). However, when I try to delete the white by hand, I find the layered objects, like the crest of a circle or tail of a leaf. How can I easily delete the white and the parts of the objects that are hidden but come to view once the white is gone? See the pictures below to get an idea. Thanks!!!!

To make it truly transparent will mean expanding shapes and text, either using Shape Builder tool or Pathfinder and creating a Compound shape. Not worth the bother if you just want to place it on top of a varied color background.

Basically, I'm trying to switch these logos with the new ones. The small colored one won't be an issue, but the one behind is. I was able to figure out how to make it using a rectangle, transparency mask and gradient, but I can only do it in black (or white if I invert colors), but I can't get this pink/rose color. The object that is there now is one image that only consists of the parts you can see and in between, exists nothing so you can change its color without creating a "fill".

I can post the files if that would help.

PS - I'm not a professional and have never taken an Illustrator class

Will this be built exclusively in AI? InDesign and Photoshop are also options.

If done in AI, you could use your existing B/W version and use it as an "Opacity Mask" on top of a white rectangle. Learn about Opacity Maskes here: Control visibility with opacity masks |

On the Opacity Mask channel you can also include a gradient to cause the logo to fade out at the bottom.

While it is certainly possible, I must ask, have you considered setting the existing image to "Multiply" and adding any color under the completed logo?
