Is it possible to change the default pie chart settings, those that a pie graph is created with (such as stroke, wedge fill colours, text)? In particular, I would like to modify the default text font size the pie chart is created with.
Also, is there a way to introduce an offset (angle)? The pie and legend text always starts at 12 o'clock. Can I make it such that the data set starts at 1 o'clock?

Impossible for pretty much all of the settings.
WIth the text: Try and change the Default character style. It somewhat influences the text formatting.

Is that in Window>Type>Character Styles and then change the font size for Normal Character Style? Or can I do that by creating another character style?
The size of the legend text that Illustrator creates upon creation of a pie chart is minuscule but that is used to set its position with respect to the wedges so resizing the font after it was created no longer adjusts its position with respect to the wedges. This is why I'd like to set a more suitable size right at creation.

(I'm using a German version, I can not look up how the default style is called in any random language)

This is a great tool and a real time saver - Except that it is very frustrating for small reasons.
Data is entered in a specific order, because that is the order the segments of the pie need to be in. Why are they re-ordered automatically?
Please provide an option to reorder based on data value, but the default needs to be 'Render in the order entered', ideally starting from 12 o'clock
Option to enter colours and strokes in the data entry sheet ie RGB / CMYK values would be faster than the need to edit sections after chart creation.
PS attempting to edit and re-order sections (when the created order is incorrect) after chart creation is very slow, very painful and sections do no fit correctly to new locations. Thanks.

You can "Expand" any graph in Ai and change their property after creating. Try that also

By expand, you mean ungroup? If so, I am aware of that and it creates other issues. This is why I would like to adjust the text size in the graph stage (in fact, before the graph stage, right at creation).

Hi Ares. I just tried that! I only have the option to Expand Appearance. Expand is greyed out. It looks as though this is going in the right direction, though I am losing some editability features that graph has. I will dig deeper. Thanks for the tip.

Right. I mean Expand Appearance. Expand Appearance active when your object have Complex Appearance. (take look on Appearance Panel). If not, you will have active only "Expand" option.
After expanding you will no longer be able to use graph settings.

And what is the difference between ungrouping and expanding appearance?
Both expand the graph.
