How can I distort text in illustrator?

You can apply an envelope.
Or outline the text and make an artbrush
Or outline the tet and just drag the anchors.
If you show an example, then perhaps help will get better.

I need this text to stay perpotional (envelope warps it) and sit on the arrow.

In this simple case without (real) perspective, how about just using Object>Transform Shear with a Vertical axis and a Shear Angle in the order of -18 degrees (you can use Preview and adjust position and angle to fit)?

You have created a clipping mask.
Probably that's not what you wanted.
Object > Clipping mask > Release

WHen you select the items that you don't see, what does show up in the Appearance panel? Maybe you have applied no fill/no stroke

Can you selec one of those paths with the direct selection tool? So there is a fill and a stroke in the Appearance panel.
