Documents are detached and undocked Issue

Hi, I'm having an issue where my document tabs/document window are detached and I've tried everything I can think of aside from reinstalling illustrator or upgrading to Big Sur. As well, Illustrator will not minimize, if I hit cmd m on mac it will minimize the document tabs but the control panel and top bar are still visibile.

- On most recent update of Catalina, don't want to go for Big Sur yet
- I've closed illustrator, restarted computer, and made sure all CC apps and CC are up to date

- I've reset/switched around workspaces, nothing resets the "detached/undocked" documents. They're always undocked regardless of workspace selected

- Tried Window > arrange > consolidate. Have tried windows > arrange > float then consolidating and still no luck

Using fullscreen mode returns some of the functionality I'm used to but of course I have to cycle out in order to go to my other open documents.

Hopefully someone has a solution, attached screenshots.
