Editing the data in stock-image infographics

Hi,

There seems to be literally thousands of eps stock image infographics with beautifully styled pie charts but… i think i must be missing something here about how you can edit the data contained in them? (using the Object > Graph > Data function)

When i create a pie chart from scratch and want to change the data i have to ‘ungroup’ it and then i can change the percentage slices… but i can’t seem to do this with infographics? The advice from this thread is to ‘select release clipping mask, ungroup or undo outlines’ but i don’t appear to have the option to do any of these things? I’m wondering if i’m going wrong somewhere by opening it in EPS and then saving is as .ai -  there must be some trick i’m missing here (or are these images just a total waste of money...?)
