Effect for achieving simple highlights

Does anyone know of a third party Illustrator plugin that will create simple effects like this? Kind of like Photoshop's Bevel & Emboss filter. I hate trying (and never succeeding) to achieve this with drop shadows and inner glows. Or is it possible to do this as a live effect already? If so, please show me how!

But then if I add a Pathfinder > Subtract operation to try to subtract the black from the white, I get this, which not only doesn't work, but the result is completely inexplicable:

This video looks like it might be just the thing, but I can't read the menus to know what he's selecting!

I tried running a screenshot of his Appearance palette through Google's image translator, but it didn't really help:
