Question

Export for screens" or "export as" doesn't offer gif support

It would be amazing if illustrator could export multiple artboards as GIFs.

Neither of these functions offer GIF support. The ability should exist. We should be able to export multiple art boards at one time in GIF legacy format. The only way now is if you use File>Export>Save For Web. Using this method only allows you to do each art board one at a time.

Just a side note: That used to be possible in older versions of Illustrator.

Guess the .gif file format will gradually be disregarded nowadays.

unfortunately, if you are dealing with low res electric signage, where the display is in pixels (240x60) and each pixel = 1 light bulb... a GIF is the cleanest format.

It is different from your Adobe Account, so you need to create a new one.
