I can click on the color box and change the color, but I can't use any of the other features that are available when you click on the word "Fill" such as multiple fills.

You have to use Window > Appernce for that, not Window > Properties.

As Monika said, but just to clarify: there are no other fill options available from the Properties panel.

Thank you both! I thought that it was available in the past but maybe I'm mistaken, or had a different set of tools open.

I'm having the same problem. Gradients also don't seem to work for me. I can only add them through the appereance tab, but I am not able to change the color. Why am I paying for a product that isn't working?

I am currently using Adobe Illustrator version 29.1

Previously, I was able to apply gradients directly to text using the standard Fill option in the toolbar without any issues. However, now, when I attempt to apply a gradient, the gradient appears in the Fill preview but does not render on the text itself, which remains black.

I have also attempted to apply the gradient using both the Gradient panel and the Appearance panel, but neither method has resolved the issue.

Sadly, the site won't allow me to upload any files. But this problem occurs in all of my files, newly create or already existing.

To apply a gradient to text, select the text with the Selection tool (V) and  set the fill to None.

In the Appearance panel, add a new fill and use a gradient.

This isn't the same problem, as the original poster is in the appearance panel. Not sure what your issue is exactly. If you have a gradient (went to the swatch panel and clicked on one), you should be able edit it either the using gradient tool or in the appearance panel, if you click on the fill thumbnail arrow, you get a pop up, which then gives you gradient options to edit the fill. Are one or both of these not working?
