Hello!
I'm using Illustrator for the first time in an attempt to make a flashy CV (resume). Running on Windows 10 and the most recent version of Illustrator.
I followed an online tutorial which gave me a package to download which had three templates. I've filled it out how I like it and I've deleted the other templates, but now when I export the image, it's only a small white square. I looked into it a little already, and I think that there's an artboard in the corner.
Do I need to move everything from the CV onto the artboard or can I just delete the artboard?
I've attached some screenshots to help explain - sorry if this is basic, but I can't seem to find a fix online!

There is some missing information from your question, but I'll try.
First, you can't delete all of the artboards.You should have at least one, and if you are going to print the CV, the artboard should be 8.5" x 11". I can't tell the size of your artboard or your artwork, so please help me there.
Then move the artwork onto the artboard. Again, if it is going to be printed, it needs to fit on the 8.5x11 artboard.
Will it be printed?
If not, you can make the artboard the same size as the artwork.
What format are you trying to export it to and why?

check the artboards panel from :
window -> Artboards
delete all empty artboards,
one more easy, quick and basic way:
select all objects ( ctrl + A) then copy ( ctrl + c)
then create a new document ( ctrl + N ) and paste ( ctrl + v)

It looks like the 2 white areas you see at the right, are the empty artboards you ar exporting.
In this case it is probably as easy as Select All and choose Object > Artboards > Fit to Selected Art
Or select the light blue background and choose Object > Artboards > Fit to Selected Art
This will give you an artboard with contents that you can export,
