How can I change my adobe theme I'm using in indesign from rgb to cmyk?

When does it do that - when exporting?

When you print or export as pdf with convert to destination checked for output.

Color theme? It will automatically become CMYK when you print.

The problem with converting from RGB to CMYK is that you will lose color information, RGB colors are often more vivid than CMYK colors. It is best to postpone the conversion and let Color Management do its work.
