I am about to start a research project with a collegue and do consider to appoly a Gannt chart to guide os through the process.
Are the Gantt chart templates sold by Adobe functional with variables, dependency links etc or are they hust for illustrational purposes? It does not seem clear to me,

Do you mean from Adobe Stock? You won't find a functional gantt chart. They are all just illustrative and IMO pretty useless -- as if you really wanted to present your data that way, you'd have to do so much editing that it would be better to create the thing from scratch.

For real dependency tracking you have to sign up for Microsoft 365 and use MS Project or any similar service. As already pointed out, all those templates are just fancy graphics that might be good for illustrating simple timelines with linear dependencies, but all of that has to be done manually.
