Hi there.
I'm having trouble with overprint.
I Thought I new how to do it, yet this logo proved me wrong.

Eduardo, how is this job printing I see this as 3 color job either way:
- PMS Yellow, PMS Orange, Black
- Yellow, Magenta, black
I am not sure what you desire for this to look like when this prints, where the black "v" overlaps the "z"
You also do not want to overprint the same color, that will barely get any darker, just will remove pinholing (kind of like painting a wall with a second coat of paint).

Where you have yellow Z over yellow Z. In spot color you would fill those with a spot orange, since the colors are similar you color overprint orange on top of yellow, rather than trap.

Is overprint preview reliable?
I mean PANTONE yellow over black (I reduced black tint 50% underneath
yellow).
And will Multiply (CMYK files) also be what we'll get after printing?

It is best not to mix overprint and transparency in the same job. You can use transparency to simulate overprint but don't expect normal overprint to work in the same file.

Overprint is entirely reliable, I have never specified overprint and not had that work as expected.
I personally prefer to use multiply in the transparency palette. For example one of you designers picsk up a packaging design to do a flavor extension, they change the black type to white, because this flavor has a dark background, they release the file to the printer and the white type disappears. So with the transparency you do not have to worry about someone menacing a mistake because they did not have overprint preview on.
