Help font "glitch"? with illustrator please help

I've been using adobe photoshop for making typography stuff for like a under a year now- So I decided to do a trial of adobe illustrator see if I like it- well when I go to enlarge my fonts (same size as I do in photoshop), the fonts look like parts of them are missing/distressed grunge looking- I tried it with many different fonts all had the same issue- so I closed up and went over to photoshop and no issue whatsoever with the fonts. Why would I have this issue in illustrator and not in photoshop?

Thank you so much for your time I truly appreciate any help in this matter, this is a fun hobby for me and I'd like to utilize illustrators tools- but this is really a deal breaker for me if I can't figure it out.

wait one last   question since you know what you're talking about- ok in photoshop I can flatten an image and it can't be edited - when I save an SVG in illustrator will it be able to be edited? this SVG file is for a customers vinyl cutting machine- so it would open in a non adobe software like cricut or silhouette design space.

Grunge? That sounds like View > Preview on CPU can fix it.
