Help with changing font colour to opposite to whats behind it

Hello, 

 

Would anyone know how to change the colour of the word 'matters' so when it has black behind that part of the word is white and when theres white behind it that part of the word is black?

Make a copy of the word MATTERS.

Make both the M and MATTERS text black.

Select both and Alt click the Exclude button in the Pathfinder panel to create a compound shape (text remains live).

Paste the MATTERS copy in the back, make it white and group it if you want to put the result on a different background than white.
