So I know how to type in a path, but how can I add a background color to the text I am typing in a path?

Do you mean color immediately behind just the text (not the whole circle) - use the Apperance panel and Type to create a new stroke behind the text fill (grab the stroke in the appearance panel and move it below the fill) - you can add more strokes too...

Ton is correct. Here's an illustration:

(1) It sounds like you figured out it's best to use the Area Type tool to type inside a path.

(2) Click on the edge of the path with the Direct Selection tool, select the Fill icon, and add a fill color to the path.

The fill only works on changing the color of the text, but I can't seem to be able to change the color of the background.

If I use the direct selection tool it gives me options to change the fill on the path, but it doesn't change colors behind the text...

It works if I type inside the path, but not around the path..

Deselect the path. Use the Direct Selection tool to click on the border of the path shape and fill the path.
