How to change default font size

Is there a way I can set the default font size when I create text? It's set to 12pt, but I work in much larger artboards and would like it to start closer to 60pt at least.

You may create a New Document Profile or a template file (.ait) where the [Normal Character Style] in the Character Styles panel has been modified to the size you want.
