Hi there,
Apologies in advance if the solution is something I should've known.
I haven't used Illustrator for a long time.....
When I try to type a text, the colour of text always comes as black despite Fill is set to white (see screenshots). I am trying to type a white text on a black background.
I can of course change a text colour by selecting the text and then change fill colour but surely I should be able to write a text with any selected colour in Illustrator like other adobe applications?
Or am I missing something? I use Illustrator (25.2.1) on Mac Big Sur.
I really appreciate your advice..... this small problem is driving me slightly mad.

Thanks for reaching out. I am afraid there is no direct setting to change the default text color. In addition to @Jacob Bugge suggestion, you can do this by changing the default profiles settings. But I wouldn't recommend this. However, if you still want to do it, you may try the following steps:
