I am sure this is pretty easy but I can not find a video on how to do this exactly. I want to create letters but use silhouette images to help create the letter. I know that I am probably not saying this correctly so please take a look at my example.
In the example I would like to know how to make something like Q in Queen and the A in Pawn.

It's all an illusion. You simply create the normal graphics of your chess pieces and layer them on top after having converted the text to outlines, dissolved compound paths and removed existing inner holes such as would be the case for the Q and A. If need be, you could then of course create genuine cutouts from your shapes using Pathfinder operations. Realyl basic stuff. I would suggest you start by reading the online help based on those keywords.

As I (mis)understand it, and presuming you wish to be able to use the letters with any background colour, and presuming the silhoutte images are fully black and white, you can:
1) Release the Compound Path of the/each letter and delete the inner counter (hole) paths as suggested by Mylenium,
2) Position the silhouette image in front, then in the Transparency palette (flyout) click Make (Opacity) Mask with Clip unticked and Inverse Mask ticked (in the main Transparency window).
That will make the background colour show through the silhouette parts that were white.
