How to make an older version of Illustrator my default setting?

I pretty much need all my work documents to save to an older version of illustrator so my colleges can go into the files and edit them.

Is there a way I can save the older version of illustrator as my default setting so I don't have to select it every time I save a file? 

I use the current version of illustrator but my manager uses an older version!

You can somewhat do that if you base new work on existing files. That is, don't use templates and don't use the New file dialog box, but have plain AI files (old version) that you first duplicate, assign the new filename and then open. After that, just save them (don't use Save as).

This kind of workflow might lead to other issues (because it's a good idea to use Save as every now in then in order to force applications to get rid of overhead in the files). Also you will need to take care of backups of your files.

Unfortunately, there is no way to save to an older version by default.
