How to save my PDFs in colour instead of black and white

This is probably an easy solution but it's one I can't seem to work out!

When I save my Illustrator files (all in colour) to a pdf, they always turn out in black and white. This never use to happen and I'm not sure what I have done. I've gone through all the settings and options and I just can't figure out how to keep the file in colour. Can anyone help?

Can you check your document in a different viewer, a browser or on a Mac; Preview?

So: which options DO you choose?

Also: I suppose you view that PDF in Acrobat? And it's set up with the correct color profile?

If you don't use Acrobat, try that first.

I do view my PDFs in Acrobat. Not sure if it's set up correctly with the color profile. How would I check or change this please?
