Ok Adobe I have questions:
Notice that list up there? The site automatically generates that list when it recognizes a number with letters and a hard return, but, and now here's the real kicker, you can still delete the numbers! Truly we are living in the future.
Seriously though, this is a truly baffling set of decisions. Can we please start testing these features with actual designers who are working before inflicting them on us please? If you did this, then you need to find a new cohort to test with, because no working designer who has been doing this for any length of time is going to be ok with you stripping out functionality of basic tools and which requires going into preferences to turn off just so they can have the same very basic functionality that has existed in software for, and I'm being literal here, decades.

Your questions:
2: That is a normal behaviour of lists. The numbers are generated automatically and that needs to be the case. In Illustrator you press return twice and you're ending a list.
3: Default formatting is done in Character Styles and Paragraph Styles. Lists *are* turned off in the Default Paragraph style, but the Preference setting overwrites it.
As for the beta testing: you can apply to get a part of it.
