We use Illustrator CS5 several years, and use font preview in the text menu.
After Windows10 2018 spring update, happend Monday this week, we cannot
display text preview list. I confirmed in the environmental setting that font
preview check box is 'ON'. I turned it 'OFF' once and 'ON' again and restart
Illustrator again, but of no use.
Are there any idea to display font preview menu?
You need to downgrade your OS or upgrade your Illustrator. CS5 was never codified to work with Win 10, you are working on the remnants of code from Win 7. Win 10 font engine has been upgraded to work with variable fonts, as is CC2018.
Is good practice to check the system requirements of each of your software apps, before updating your OS.

This problem has been reported many times by users of CS6 and earlier versions of Illustrator since the recent update to Windows 10. As Mike says Windows 10 has never supported any of these earlier versions. If things have been running smoothly until now you should consider yourself lucky. Windows 10 is constantly automatically updating itself and sooner or later the earlier versions will not work at all. Some alternatives would be to roll back your operating system to an earlier version, try to run your computer in compatibility mode with Windows 7, buy an old computer from eBay that has an earlier OS or get a subscription to Creative Cloud and update to the most recent version of Illustrator.
