Hey there
I'm a design student living in Switzerland and I'm quite struggling with precise illustrator curves such as the ones attached. Does anyone of you have an idea to make such clean curves with thinner and thicker lines?

This one looks like it's just one line and then duplicated like so:
To get precise calligraphic strokes you can also use calligraphy brushes or the variable width tool. In the case of this design they won't work too well though.

I have a new question though, sorry for asking again. But may you post your calligraphy brush settings? Mine seems quite wild and chaotic, without precise strokes. Thanks very much in advance!! 🙂
EDIT: Here's the picture attached where you can see the calligraphy goes beyond the anchor point and it gets quiet "squishy"

You're right.
Switching between "GPU Preview" and "CPU Preview" can sometimes improve, but the calligraphic brush is "quite wild and chaotic without precise strokes".
Calligraphic brushes give rather incomplete results.
You can think of it as "taste", but many people think it's "dirty," as you felt.
If you want precise shapes, I think you should draw in a way like Monika's suggestion.
