What do you see in File > Version History ?

If it saves every 5 minutes, there should be a long list to get back to.

I checked it and seems to have stopped working, the history says that the last time it was saved was at 2:51 pm and the program froze at around 4:00 pm

Then I would suspect the Internet connection, since it seemed to have worked for you reliable in the past.

But it is only a guess.

Do not rely only on the File Recovery. Never ever.

Does it work better when you save local files?

Is your network connection working reliably?

Did you already log out and then in to your Adobe ID?

This has never happened to me before, I've always worked from the cloud for quite a few years. Do you recommend that I start working locally instead? I have a stable internet connection, with good speed, 1 Gbps. I connect via wired connection

I log out and then in to my account, nothing happened, it's still the same.

I've already accepted that I'll have to work again on everything I lost, but I still don't understand how after so many years, it could fail like this, having saved manually.
