Illustrator displaying CMYK colours as RGB

When working in Illustrator in CMYK color mode, the colors appear as RGB. It is only when I export the file that I can see the true CMYK colors. Why would this be? Is there any way to fix this so I can work in the actual CMYK colors in the document?

How does your Edit > Color Settings... look?

And what is your Document Color Profile?
