Maybe it's just that: smaller. A design decision.
Mine is smaller as well, but so is the Safari icon.

Try this :
Navigate to where the actual application file(.exe) is,
right-click it and select properties,
choose the compatibility tab and select "Change high dpi settings" under the settings section,
in the next window, select the checkbox that says "High DPI scaling override",
and choose "System" from the drop down.
-Hit ok to save the changes, and then re-open illustrator

The word "dock" in your post leads me to believe you're on a Mac. What operating system are you using?

Hi Jeff, Yes, I'm using OS11.1. I updated all the software together when I updated to Big Sur. Just seems really bizarre that the Illustrator icon is smaller. It's not a major issue in the scheme of things. But just looks odd.

My Adobe icons are all the same size. Weird!
Have you tried deleting the icon by dragging it out of the Dock. Then drag it back into the Dock from the Application? Just a thought!

Yes, tried that. On the other Mac the InDesign icon is smaller 🙂 I guess it is what it is.

I was wondering the same thing but just updated InDesign and the very latest version now has the same small icon like illustrator so I'm assuming when I update all my other apps, the new smaller size is the norm.
