I am also having issues with the shortcuts working. eg. Control C and then control V and ctrl Z (this just deletes not undo)
i also find everything takes along time - selecting part of a file to move or saving.

As a first step, have you tried resetting preferences?

I am a graphic designer and I use illustrator, acrobat and sometimes photoshop on my computer. I also have microsoft office on computer. Most of my files are stored on a portable external drive and I have had my whole computer checked and no issues with anything besides illustrator.

I was rather interested in your Illustrator files. Since everything takes so long. How large are your files?
So there is 64 GB of RAM. Should be sufficient. What happens when you turn off your browser. Browsers are known to eat memory.
Are you using a gaming driver for the graphic card? Or the Studio driver. Illustrator does not like gaming drivers.

If Adobe Illustrator is freezing and stopping when installed from the Creative Cloud desktop, you may want to try these steps:
Ensure your system meets the minimum requirements for Illustrator.
Update your graphics drivers and the Creative Cloud desktop app.
Try resetting Illustrator's preferences to default settings.
Uninstall and reinstall Illustrator through the Creative Cloud desktop app.
Get ready! An upgraded Adobe Community experience is coming in January.
