Illustrator keeps changing fill and outline to white and black every time I go to change the color

Recently, Illustrator keeps changing the shape fill and outline to white and black every single time I go to change the color, specifically the second I open the swatches panel. I just undo it and then choose the color I'd like, but it is starting to get realllllyyyyy annoying. I was hoping the most recent update would correct this bug, but it hasn't--the issue still persists...and annoys me. Why does it seem the most recent updates are full of bugs? Please fix.

Thanks for sharing the details about the issue you're experiencing. This behavior of Illustrator resetting the fill and outline when opening the Swatches panel is often related to a corrupted preferences file or a conflict in the color settings. The quickest way to address it is to reset Illustrator's preferences. 

If the issue persists after resetting preferences, please check if it happens with all files or just specific ones. Also, make sure your color settings in Edit > Color Settings are consistent with your workflow and not conflicting with any document-specific settings. If possible, please share a screen recording demonstrating the issue in action for better understanding.

Unfortunately, all the reset served to do is eliminate all of my set up so that I now have to put everything back the way I like it.  The problem still exists.

Do you use the Control panel or the Appearance panel to change the color?

This is the correct problem, but I don't see a solution in that thread.

There is no solution at the moment, but as Egor mentioned there, Undo and clicking the button again helps.
