Illustrator lagging a lot when editing big files

Hi! I have a problem with my Illustrator... When I'm editing a big file (359 artboards) it starts to lag and sometimes closes. It takes a while to complete any changes and to save. The problem is that other people have edited this same file without so much problem in an computer with 16gb Ram and a simplier configuration. 

 

My setup has 32gb Ram 2666mhz, GPU RTX3060, CPU Ryzen 5900x

 

The total CPU use stays around 15%, Ram use atound 85%, Disk Use around 21% and GPU stays in 0% use (Not sure if this should happen, the GPU use is selected in the software).

 

If anyone can help me with that issue.
