I am trying to create a line graph in illustrator over a period of time where the intervals are uneven. I wish for the period of time in days be proportional as well as the measurement in inches at those intervals. I can't figure out how to do this.

You need to create a scatter plot.
Use the appropriate tool do create one, or let Illustrator just create some odd default graph and then change the type to Scatter Plot. Either way, that's what you need !

Sorry, I don't have a spreadsheet. I just have a list of dates and
measurements. The graph tool seems to be able to plot numbers on one axis
proportionally, but the increments on the other axis are always consistent.
