Hi everyone,
I am having a problem with Illustrator and Photoshop also, they save as a new AI or PSD file when I edit other file formats.
Let's say I am editing an EMF file in Illustrator when I click on Save from the File menù, Illustrator automatically asks me to save the file to AI format instead of just saving the edits on top of the original file, this also happens in Photoshop when I edit any PNG or JPEG, and I click on Save then I need to save in PSD then export in the desired format.
I am more than sure that it was an option that when I hit save it would just save whatever I edited on top of the original file with the same format before the last update.
I am running version 28.1 of Illustrator and 25.3.1 of Photoshop

When you open an EMF in Illustrator, you are actually importing that file. Illustrator's native file format is AI and that's what it's working in.
If you want to have an EMF, you need to export it.
With Photoshop it is like that: if you are doing edits that require additional layers, masks and whatever, that cannot be saved as a JPG. Otherwise Photoshop would do that.

I do not think that's the case and I will show you...
I am opening this image .jpg in PS
And do a simple edit like cropping the hit save
You see that after I hit save Photoshop instead goes to the Save As window this was a simple edit like cropping so no other layers or anything special is been added to the file.
Same in illustrator, I am sure I was able to do what I am trying to do with EMF files...

I do not know exactly how you opened that JPG or which options you have set up in Photoshop for cropping. There are circumstances in which it creates a layer. And it converted the background layer to an image layer (as can be seen in the layers panel). That is something that must not be in a JPG.
You'd better ask about that in the Photoshop froum. They should know how you need to set up Photoshop.

You must have done something else to the jpeg. I see Layer 0 in the Layers panel. JPEG does not support layers but Photoshop does. If you check Delete Cropped Pixels you will save the jpeg as jpeg

This is because you are using .emf which is not a native format. This is a safety net, as you should always have a .ai file as backup , and then export to the final format format like .pdf and .emf you will lose editability keeping the as your master format.
Save as .ai and then you can make edits adn save over the .ai as many times as you like with command S.

I understand what you are saying, but I have done it before so I am afraid but I have to disagree with you. My guess is that with latest updates something has changed in both AI and PS
