Illustrator Stroke and Brush editing consistently causing crashes

I have been experiencing crashes with Illustrator specifically when editing strokes and editing pattern brushes. I've listed below all the components of the problem:
- I'm using Illustrator 28.1, which at this time should be the most recent. I keep it updated, and It's happened with every version I've used for the last 2 years, though, so that seems like it's almost a moot point.
- I'm on a Mac Mini M1 with 16g RAM running Venutra 13.6.1, but again, it's happened independent of version.
- It happens at different times, in different areas of stroke editing, but almost without fail it happens when I am trying to make a pattern brush. It will happen MOST often, by a thin margin, when I am editing the inside corner image, but also happens slightly less often when editing the standard/outside corner option. The exact moment varies: It's crashed when clicking the drag down button, when scrolling through the options IN the drag down menu, and when clickout the selection in the drag down menu.
- I've also had crashes when I do other stroke related edits, such as changing the point value of the stroke, selecting an arrow head, adjusting arrowhead size, chosing stroke profile, etc.
- I've attached images specifically of the pattern brush editor, and the pattern it is currently crashing on, but PLEASE bear in mind, it's done this on strokes that are literally default black strokes that I make ANY changes to.
- I believe this is the only thing that makes Illustrator crash, at least consistently, for me.
- The crash is a full crash, ie. the program window disappears and the app no longer shows as open in the dock, with no lag or pin wheel preceeding it. It's literally click the button > everything is gone.
- I have also done the boiler plate "Resolve Crashes in Illustrator" recommendations I've found on forum posts.
I would REALLY like to get more involved in using brushes in my workflow, but this has literally stopped it dead. The issue with editing simple strokes has cause a bottle neck in my process, too, because I need to save my file anytime I'm going to adjust a stroke at all for fear of losing any unsaved work.
