Hi, When I changed the background color to black (with "simulate coored paper") and tried to enter white text, it does not show up. When I waited a bit to look through these forums, I could type again. Then the text was invisible. It's WHITE TEXT. When Highlighted, it looks like it's black text

Use the default white is a process/CMYK white, which is actually the lack of ink, so nothing would appear.

One would think that a spot white* would show up properly, but it doesn't (but should).

*If you are printing on black paper you will need to print a spot white ink.

(It works properly in InDesign if you make the paper color black and use a spot white swatch.)

The best bet is to follow Monika's advice and make a background layer with a black rectangle on it.

However, be sure to lock the background layer and make it non-printing; then use a new spot white swatch for your white text.

    Of course it doesn't show.

    Offset white is paper color.

You want to have a background color? Then draw a rectangle and assign a fill color.
