I will ask for help with the issues one at a time.  I receive art file/s that are embedded.  I am not able to create what I need from the file (i.e. size, color…).

It would be good to know which version of Illustrator you use.

Also: what kind of file exactly do you get?

And what exactly do you want to do with that content?

Are you sure that the content is an embedded JPEG? Because an embedded layered PSD would need some different approach.

Creative Cloud 2017 version

When I open the file it tells me the file is embedded (upper left hand side second column) – layers will not allow any changes either.  Is there something else I need to look at to determine the file type?

Some of the things I need to adjust might be size, color, layout…

Can you please show a screenshot of the exact message Illustrator pops up?

Un-embedding is simple: just select the image and click on the unembed button in the control panel. Then follow the instructions in the dialog boxes.

But I'm still not sure if this is your issue.

The problem with an embedded image file is you probably do not have access to the original image file.  I would Export > high res .tiff the entire file.  Then, in Photoshop, open the exported .tiff file and crop the image, then save it so it can be Placed ( and Linked ) in the future.  Hopefully, there are no text elements interacting with the image.  If there are, you will have to track-down that original image file.  Once you have the image file saved, go back to Illustrator and delete the image file that is there.  Resave that Illustrator file and continue on.

Open your AI file in PSD and choose "Image" at the top of the dialog window, then open the image you want. Save/edit as you wish.
