Is there any error warning?

Could it be that the JPEG is in CMYK color mode?

sometime there is an error warning on instagram but mostly it takes a lot of time to upload or nothing happens that i just give up and close the app.

I already changed it to RGB because the color was different on my phone but it didn't fix the uploading problem.

How big in terms of number of pixels are the JPEG images? Instagram has certain image size limits (I think the current limit is around 1080 pixels wide or tall, and the site likes square images). But I think Instagram automatically down-samples any high resolution image uploads to those smaller 1080 pixel sizes. What kind of document is the original Illustrator file (RGB or CMYK) and what kind of JPEG export settings are being used?
