Knife tool creates geometry

I'm still learning via tutorials and every one I watch that shows how to use the knife tool, it cuts smooth as silk. When I choose the knife tool and try to slice through even a simple circle the knife creates a grid of geometry that appears to be a series of artboards. I CAN'T MAKE A CUT.

Very frustrating after watching many videos and using the adobe tutorial. I'm guessing I can't find a toggle or something.

Thanks
