Laggy illustrator

Once every 20 minutes or so in a document, my illustrator will stop, become super laggy and all the images will become very saturated and yellow. Its very odd. I will then save and re open the doc and all is normal for another 20 min or so. I have reinstalled illustrator but the issue still persists. In the images you will see the difference in colour that i describe
