Mail merge pdf letter

I am wanting to merge letters in Illustrator using a pdf.  There are several variable fields within the letter copy.  I understand some basics in getting the pdf placed into a new document and getting the merge data source attached and placing text boxes where that works easily (such as the inside address).  What I'm unsure of is the best way to insert a merge field into the middle of a sentence and make it look seamless.   Should the pdf be in some type of edit mode?  The pdf has been saved using Word, Word having been my usual way of doing letter merges.  I know nothing about AI except what I've said here.

A PDF is "baked" data with extremely limited editing capabilities. This will never work reliably. If you realyl want to add more typographical finesse to your physical letters, InDesign would be much more adequate. It even imports Word documents natively with some basic data fields intact and thus would be easy enough to set up plus it spits out PDFs in whatever flavor you desire.
