Is there a way to do this more accurately than having to just start clicking around trying to find the perfect spot.

This special mesh can be created from a radial gradient.

Apply the gradient and then Object > Expand. In there you can make a mesh.

If it's something else you are looking for, please be more precise.

When you select the mesh nodes to change the colors, you might want to use the lasso tool for that.
