Moving vectors/images in illustrator and it's glitching

I've been having a lot of issues with Illustrator. I have a 2023 MacBook Pro, M3 Pro Chip, with 36GB ram. I've just started a new job, and downloaded all of the adobe software from CC onto this brand new laptop. So for reference, it's a very new machine, with hardly anything on it to slow it down!

Any file that I open in illustrator is really lagging, and when I click/drag to move it around, it severly lags, it doesn't follow the cursor, and disappears briefly.

I have attached a video screen record for you to see. And I can't find anything online! Any advice?
