My saved symbols are disappearing when I open new project!

How can I save a symbol and make sure that it always will show in any project that I start, so I can just pick there and put on my artboard?

Put those symbols into a New Document profile

Or save them as a library and keep that library open on launching Illustrator by selecting "Persistent" from the library panel menu

Probably a better answer somewhere (I don't use symbols) but you could save a default doc in templates with it/them in.
