I'm not sure what my daughter did to her illustrator CC program. When she tries to create a new file she gets a window that ONLY gives her the choice of one template. She can't create a plain new document anymore. Any ideas what she did and how I can fix it?

In Illustrator 2017 the New document window has been changed, you can choose from an output intent menu (web, print, video...), or from some templates, and customize dimensions and options:
If you want the previous window, change the general preferences (as Ton Frederiks suggested):
