Outlining & Manipulating font with Pencil Tool on Ipad

Hello! I've been desinging with Illustrator for a while now but just recently got an Ipad to use it on as well. I'm a graphic and brand designer so I frequently use AI to design logos and manipulate fonts & texts.

On the desktop, it is simple, select your text, outline, and then I can begin using the pencil tool to add/remove things from the font and customize it to my hearts content!

On Ipad... I cannot seem to figure this out and the tutorials I search for are not shedding any light! I've gotten as far as outlining the text, but using the pencil tool just creates paths/marks OVER the text, rather than combining to create a new path with the text entirely.

Does anyone have any experience?

I send you a screenshot , I selected my entire letter and does not appear the opción OUTLINE TEXT in bold

You need to use the selection tool and select the object. Not the text.

That's not how the pencil works on the iPad.
