While creating a path, how do I stop the curser from showing a premature, straight line, before I make another anchor point?

You can turn it off in the Preferences (under the Edit menu on Windows or the Illustrator menu on macOS):
- In Preferences, select the Selection & Anchor Display section
- At the bottom of that section, deselect Enable Rubber Band for Pen and Curvature tool
