Are they vector EPS or bitmap EPS that you want?  Have you tried to open the PDF and save it as an EPS in Illustrator?

When you say they've been turned into PDF, do you mean the extension has changed or just that they now default to open in Acrobat Reader when you double-click them?

What Adobe software do you use? You've posted this in the forum for support of a community help application that Adobe used to make - not a forum for community help. I'll get a moderator to move this somewhere more appropriate, but they'll have to guess!
