Once youve drawn a line with the pen tool, how do you adjust only one bezier handle for a specific point (not both), like you would by holding Alt down on the desktop version?

If you're using an Apple Pencil you just hover the pencil tip over the direction point handle you want to adjust and drag it. The opposing direction point handle should stay at its original length. To toggle the anchor point's behavior from a smooth point into a corner point press a finger on the Touch Shortcut (the little circle icon at the lower left corner of the workspace) when moving the direction point handle. You'll see the color change on the Touch Shortcut icon from being white, filled with blue or outlined with blue depending on the option activated.

Thank you very much, the circle trick works. I'm using an older iPad with Pencil1, so not sure the hover thing will work for me, but will try it anyway. That link is very useful.

"Hover" probably isn't the right word. If you lightly touch the pencil tip onto an anchor point or direction point to select it the point will be highlighted with a colored fill (usually blue). Once the point is highlighted you can drag it and use Touch Shortcut gestures to modify it.
My iPad Pro is starting to get a bit old as well (2017 2nd Gen model). The new M2 model with the XDR Liquid Retina screen is really nice (but kind of expensive too).
