Revert to Illustrator 2016

I made the mistake of updating my Illustrator software to the CC 2017 version and now any symbol I created is a non-editable waste of space.  This will cost me loads of time!  Please do NOT scold me about not reading some read-me file warning I should have seen before updating.  Instead, please tell me how I can revert to Illustrator 2016 so I can meet my deadlines without working all weekend.

In Creative Cloud, scroll down to Previous Versions. Next to Find Additional Apps, choose to filter and select View Previous Versions at the bottom.

Looks like I'll be stuck in previous version hell for a while.  Just talk to our IT department and it seems I'm not the only one having issues with Adobe!!!  The wheels are turning. . .
