Slow performance and memory errors while using Illustrator

Illustrator maxes out using a bit over 4 Gb of memory; however my computer has 64 Gb. I am using the latest version of Illustrator and my computer specs are:

CPU: i9-10920X

RAM: 64.0 GB

OS: Windows 10 Home 64 bit

I keep running out of memory and Illustrator runs extremely slow. Is there a max memory setting I am missing? This is extremeley frustrating. Even when it does not say I am out of memory, it takes several minutes to drag an object.

Any tips would be great, support imeediatelys aid they wanted to take control of my computer, which is not something that I can do due to encryption & security concerns realted to my job (potential patent data exposure).
