Pretty much as you see in the title.
It's a simple enough solution for me to workout, I just close Microsoft To Do... but it would be nice if I was able to keep it open whilst using one of the most important shortcuts/hot keys in Illustrator.

Thanks you so much for sharing this information. This issue has been reported by a few other users as well and in most of the cases it was found that there is some application which is conflicting with shortcuts. Does "Microsoft To Do" has some default set of keyboard shortcuts?
I would also request if you could upvote this issue and share your observations here (https://illustrator.uservoice.com/forums/601447-illustrator-bugs/suggestions/31952662-spacebar-not-working-as-quick-hand-tool-on-mac).
